Culinario Training Video

Culinario training video

the background:
Catering is at the core of Welcome Break Group, generating over £80m each year for the motorway service area provider. In the last three years this business has grown, through Burger King, KFC and Welcome Break's own food brands serving 24/7, 365 days a year. But there is still a huge opportunity for growth in hot meals.

The company has recently invested in an innovative food display system for every one of its sites across the UK. The Beer Culinario is a smart way of holding food, with an innovative heating system keeping dry food like fish and chicken crisp and moist, while curry and lasagne are kept hot under a heat that doesn't dry it out.

the brief:
Welcome Break Group needed to ensure that training for colleagues using this new equipment was accurate and consistent. The Culinario is a great display tool, but there are some fundamental differences between it and old-fashioned heat trays. The operators had to fully understand how to use their new equipment to get the most out of it and maintain the company's growth in hot meals sales.

the strategy:
Working with the Brand Manager and Training and Development Manager we developed a training DVD explaining the key differences between the Culinario and the old food display systems. The main section of the programme would be a demonstration of the features of the equipment, presented by the Brand Manager himself. After the demonstration the Brand Manager would recap on his 'top five tips', reinforcing the training and leaving the viewer with clear, concise instruction on what should be remembered when using their new machine.

The DVD would open with excerpts from an interview with Rod McKie, CEO at Welcome Break, talking passionately about what the Culinario will mean to the overall quality of food. The DVD also includes an example food layout, so that managers can see further demonstrations of how best to display food using the Culinario.

the result:
Since the Culinario's introduction there has been a 60% sales growth increase at some sites. The days of cremating food in old-fashioned heat trays have gone; the new equipment displays the food in an attractive way, and keeps it fresh and piping hot.

This was Welcome Break's first training DVD project, and the programme needed to be finished for a launch at the two-day company wide 'Food for Thought' event; so the pressure was on to script, film, edit and deliver in a short timescale.

The training DVD has received praise from all parts of Welcome Break Group for its easy to understand, stylish approach to consistent training. The Site General Managers and Culinario Brand Champion commented:

'The DVD is absolutely fantastic - better than Jamie Oliver!'

'We should be doing more training aids like this'

'The DVD is fantastic, it should really enthuse everyone to take that bit of extra care and help deliver fabulous food'

The Head of Training at Welcome Break commented:

'...it is an invaluable piece of work - a truly worthwhile investment and excellent value for money. I would not hesitate to use iceni again and would recommend them to any company wanting to create an impressive, professional corporate film of which they can and will be immensely proud.'
